Cajun-Style Chicken and Sausage Gumbo
This recipe is characterized by a very dark roux and deeply developed flavors.
Ingredients
Proteins and Stock
- Chicken: 2 lbs boneless, skinless chicken thighs
- Sausage: 1 large rope of spicy andouille sausage, cut into 1-inch quarters
- Fortified Stock: 1500g store-bought chicken stock mixed with 3 packets of powdered gelatin and ~35g "Better Than Bouillon" chicken base
The Roux
- Oil: 225g neutral oil (peanut oil recommended)
- Flour: 225g all-purpose flour
The "Trinity" and Vegetables
- Onion: 400g, medium to large dice
- Celery: 250g, diced
- Poblano Peppers: 250g, diced (used instead of green bell peppers for better flavor)
- Okra: 200g, chunky slices (fresh preferred over frozen)
- Garlic: 25g, minced
Spices and Finishing
- Seasonings: Salt, 10g paprika, 3g cayenne pepper, 3g ground black pepper
- Hot Sauce: 10g Louisiana-style hot sauce
- Garnish: American long grain rice and sliced scallions

Dry Brine the Chicken: Season chicken thighs on both sides with salt and let them sit for 10–15 minutes to improve moisture retention.

Brown the Proteins:
- Sauté the andouille sausage coins in a pan with a little oil over medium-high heat for about 5 minutes until they have a dark color on most sides. Remove and set aside.
- In the same pan, sear the chicken thighs for about 15 minutes (roughly 80% cooked through). Remove and set aside.

Deglaze: Add a splash of water to the hot pan to scrape up the browned bits (fond) and pour this liquid into your stock.

Cook the Roux: In a heavy-bottomed pot (like a Dutch oven), whisk together the 225g oil and 225g flour over medium heat. Stir constantly for 30 to 45 minutes. The roux will transition from beige → peanut butter → mahogany → dark chocolate. It should look "inky" and smell very roasty.

"Arrest" the Roux: Once the roux is dark enough, immediately add the diced onions, celery, and poblanos with a heavy pinch of salt. This stops the roux from browning further and potentially burning. Sauté the vegetables for 5–7 minutes until softened.

Add Aromatics and Liquid: Add the minced garlic and sweat for 2 minutes. Slowly whisk in the fortified stock a little at a time to ensure the roux hydrates smoothly without clumps. Bring to a simmer.

Combine and Simmer: Cut the seared chicken into 1-inch cubes and add them to the pot along with any juices, the seared sausage, and the okra. Simmer over low heat ("a lazy bubble") for 25 to 30 minutes until the meats and okra are tender.

Skim and Season: Use a spoon to skim off any excess oil or foam that aggregates at the top. Once the chicken is tender, turn off the heat and stir in the hot sauce, paprika, cayenne, and black pepper.

Final Salt Taste: Taste the gumbo and add a final pinch of salt if needed to "feather it up" to the perfect seasoning level.

Serve: Ladle the gumbo into a bowl, add a scoop of white rice in the middle, and garnish with fresh scallions.
